Bárba is a home-based microbakery in Zurich, which specializes in products based on sourdough and lievito madre. It is run by two architects, Thomas Vournazos & Asini (Nina) Chatzivasileiou, both born and raised in Thessaloniki, a city often referred to as the gastronomic capital of Greece.
Combining Thomas’ passion for bread science and sourdough experimentations with Nina’s flair for organizing events and everything culinary, as well as our shared love for good food, Bárba became a means for us to connect with like-minded people. Having started with a series of unique pop-up events in Zurich in late 2022, we like to tell stories through delicious baked goods, most of which are influenced by our Greek roots. Every product is handmade in our specially modified kitchen in Zurich in limited batches, with the best ingredients possible and often mixing techniques inspired by Italian and French bread baking artisanship.
